The Best Fuel for your Morning Routine + Recipe {Sponsored}

Ahh, good ole’ mornings. I find myself in between disliking them and loving them. On the one hand it means I need to get out of the warm comfort of my bed, very much dislike, but on the other hand, I get my morning coffee and breakfast, very much like!

In the past as a family breakfast was something we rushed through and did not spend quality time on creating a substantially filled meal.  These particular mornings were when the children were a little younger, and we stayed close to home most days. As they grew and our days became more filled with school and programs we noticed them complaining about thirty minutes after breakfast that they were hungry again, with good reason. We were not providing the right fueled foods to get them through our now crammed filled mornings.

Eggs have become a huge part of our daily morning routine in the past few years. Whether it be scrambled, a fried egg over toast, hard boiled eggs or in a breakfast burrito they are always there to give our entire family the energy that we need to tackle our day right off the bat.

Did you know that a single hard-boiled egg contains, vitamin A, folate, Vitamin B5, B12 and B2 along with decent amounts of Vitamin D, Vitamin E, Vitamin K, Vitamin B6, Calcium, and Zinc. With 6 grams of protein and 5 grams of healthy fats eggs really are a super food you do not want to miss out on.

In recent research introducing eggs to your baby earlier on has become a great benefit. You bet our Margaret will be chowing down with us around the table as soon as she can.

As a busy mom of four what I love about eggs is that they are extremely simple to make. They also have endless possibilities when it comes to dressing them up if you are a not so simple breakfast type. But if you prefer simple, even just a little dash of paprika can spice things up a bit. Me? I love to add a little hot sauce on mine to get a little extra kick and pep in my step in the morning.

Not a morning person? Eggs can be had anytime of the day! A reader recently reminded me that you can add them to salads for a hearty protein filled lunch or dinner along with creating a quiche. Hard boil an egg and you have a quick and easy snack. Endless possibilities my friends.

Our family has recently started to make the decision to purchase our eggs from a local farm that is near our house. Although a tad bit more expensive to purchase you are helping to sustain the local farming businesses and economy which is 100% worth the extra few dollars. You can not beat farm fresh BC eggs!
One recipe that we love and one that the kids can all help out with is Eggs in a Hole. We came across this recipe about three years ago. It’s simple, fast and the kids love it. Pair it with either a handful of berries, some apple slices with a dollop of peanut butter or yogurt and you have a meal all will enjoy and be out the door on time. I call that a parent win all around. I do not know about you but I can take all the wins I can get these days.

 How to Make “Eggs in a Hole” (serves 5)
  • 10 slices of whole grain bread (or any bread you prefer)
  • 10 eggs
  • TBSP of Butter
  • 1 cup of grated cheese

*You will need a glass or round cookie cutter to make the hole in the bread.* 

Heat your griddle or frying pan with the TBSP of butter over low-medium heat

Using the top of your glass or cookie cutter make the holes in the bread while the butter melts. 

Place the bread on the griddle or pan along with the cut out circles

One at a time crack each egg into the hole

Once the eggs are almost cooked sprinkle on some cheese to melt it. A trick we picked up was to cover the eggs in a hole while they cooked to help evenly cook the eggs without burning the bread.

Plate your Eggs in a Hole and pair it with whatever your heart desires. Done! How easy was that?

    Sometimes I'll serve "breakfast for dinner" and it will be some kind of frittata. So quick, easy and delicious.
